Long maturation has quietened the stormy waves of flavour in this deliciously dry and appetising medium-bodied 25 year old TALISKER. Real power and depth of taste now roll more softly over the palate, yet are still vigorous. The enigmatic maritime nose slowly yields soft notes of ship's varnish and brine, sweetness and distant smoke, giving but a faint hint of the palate to come. The flavour starts sweet and gentle, with balancing acidity and saltiness, then quickly intensifies as it develops a minerally, toasty and finally peppery character. The overall effect, like the long, drying finish, is reassuringly warming. Adding a little water gives a slower, fruitier start, from which that peppery warmth still emerges.
