Manufacturer's Notes: First made in Boston c.1902 by P. Dempsey & Co., Butterfly is the first pre-ban absinthe of American origin to return to the USA. 100 years after its birth, Boston-based absinthe and cocktail historian Brian Fernald resolved to resurrect Butterfly; after years of research in local archives, he found Dempsey's hand-written recipes. He chose Claude-Alain Bugnon, Switzerland's famous absinthe distiller, to recreate Butterfly because of this expertise and his location, famed for its "terroir," especially for Artemisia absinthium, or grande wormwood. Brian and Claude-Alain worked together at the tiny distillery in absinthe's birthplace to perfect Butterfly Absinthe and help it to take flight once more. 

Serve the traditional way: pour 1 part into an absinthe glass and slowly add 4-5 parts of chilled water. As you add water, Butterfly is transformed, taking on beautiful yellowy, green hues. Its fruitier taste makes it ideal in cocktails and as an after dinner absinthe.

Butterfly marries Brain Fernald's vision with the skills of Claude-Alain, who takes more than sixty steps from plant selection, through distillation, to bottling and finishing.
