2018 Tequila Ocho 'El Bajio' Single Estate Tequila Extra Anejo 750ml

Manufacturer's Notes: Tequila Ocho Extra Anejo is made by Carlos Camarena, a third generation "tequilero" who also makes El Tesoro and Tapatio. Ocho is made from agaves harvested from one single rancho exclusively. This follows the concept in wine making of 'single vineyard' wines. 'Single Rancho', 'Single Estate' tequila is a unique concept in the tequila industry.

El Bajio is located in Jesus Maria municipality, around 7km east of Jesus Maria town at 2,170 to 2,175 meters elevation, with gentle slopes north to south. The name refers to land located harvested for this production was planted in 2012 & 2013 when the plants were one year old, therefore the agave was 6 & 7 years old at harvest and had an average weight of 20kgs with 27% sugar content.

Tequila Ocho is made artisanally in the style of times past. The naturally grown agaves are harvested only when they are extra ripe so that the resulting tequila is sweet, concentrated, complex and balanced. The processing of the agaves into tequila is done slowly creating in Ocho an intense 'agave' flavour.

This Extra Anejo was aged the minimum time of three years in oak barrels used 6-7 times previously. This was done to retain as much of the agave essence without covering it with the oak influence of the barrels, American and a small amount of French oak has been used to accentuate the flavour profile.

Nose: Cherries, red fruits, slightly acidic, oak, cinnamon and spices.

Palate: Sweet, spices, toasted oak, anise, nuts, almonds, herbaceous, black pepper and slightly mineral.

This is a tequila to sip and savour from a glass designed to accentuate its best qualities such as an international tasting glass or a brandy sifter. Salud!
