Product Description

This truly small-batch spirit starts with traditionally grown corn, rye and malted barley. All of our staple grains are cultivated exclusively for us on the Omlin Family farm in Quincy, Washington. The grains are mashed & distilled in our Woodinville distillery, then trucked back over the Cascade Mountains to our private barrel houses, where Central Washington's extreme temperature cycles promote the extraction of natural flavors from the oak. After the whiskey is fully mature, we transfer it into 200-gallon Moscatel De Setubal barrels, a rare wine produced on the Setubal Peninsula of barrels, a region known for its ideal climate for producing these wines. This "finishing" process adds notes of dried apricot & orange peel, with a honey and toffee sweetness. Candied nuts and a hint of fennel greet you for a lingering finish.
