J. Lohr Hilltop Paso Robles Cabernet Sauvignon 2001 750ml

The tiny berried fruit used in making this wine is picked mid-morning, crushed into small stainless steel fermentors and given 48 hours of skin contact. During fermentation, vigorous pump overs ensure full extraction of color, flavor and fragance. Upon completeion, the tank is sealed for "extended maceration" to achieve proper balance between flavor and color tannins. The wine is then pressed and undergoes malolactic fermentation. It is blended with Cabernet Franc and racked into 100% new French oak barrels for 24 months of aging. Lastly it is bottled unfined and unfiltered yielding a wine which is aromatically pleasing with a deliciously intense flavors of black cherry and toasty oak.
